Kombucha's origin story is ancient. The drink traces back to Northeast China around 220 BCE, then spread through Russia and Eastern Europe before reaching the modern wellness market. Across every version, in every culture, the base ingredient remained constant — Camellia sinensis, the tea plant.
The SCOBY — Symbiotic Culture Of Bacteria and Yeast — does the actual fermentation work. It consumes the sugars and tea compounds and transforms the liquid into a probiotic-rich, lightly carbonated drink packed with organic acids, B vitamins, and beneficial bacteria.
Nobody questioned the tea. We did.
What Happens When You Ask "Why Tea?"
The answer, when you dig into it, is simpler than you expect: because that's what was available. Ancient Chinese brewers used what grew around them. The tradition carried forward not because tea was the optimal fermentation base, but because it was the original one.
We started looking at Yerba Mate (Ilex paraguariensis) — the South American plant consumed for centuries in Argentina, Brazil, Uruguay, and Paraguay — and what we found changed everything.
Why Yerba Mate Changes the Equation
Yerba Mate is not tea. It is a completely different species with a fundamentally different biochemical profile. Where tea carries caffeine primarily bound to tannins, Yerba Mate delivers caffeine alongside theobromine and theophylline — the same trio of xanthines found in dark chocolate.
Yerba Mate contains 196 active compounds. The profile includes:
- Chlorogenic acids — potent antioxidants with anti-inflammatory activity
- Saponins — natural emulsifiers with immune-modulating properties
- Polyphenols — at concentrations comparable to or exceeding green tea
- Quercetin, Rutin, and Kaempferol — flavonoids with cardiovascular and metabolic benefits
- Riboflavin, Thiamine, Vitamin C, and Vitamin E — naturally occurring in the leaf
Growing a SCOBY That Has Never Tasted Tea
We made the decision to cultivate a purpose-built SCOBY culture on Yerba Mate from the beginning — not to adapt an existing tea-based culture, but to grow new cultures that had never been exposed to conventional tea as a fermentation substrate.
Over multiple months and many cultivation generations, what emerged was a SCOBY community genuinely adapted to Yerba Mate fermentation. The fermentation curves stabilised. pH behaviour became predictable. Flavour profiles moved from harsh and unbalanced toward the clean, bright, slightly earthy character that now defines our Kombucha.
The microbial community in our SCOBY cultures today has been shaped entirely by Yerba Mate. It has never fermented a green tea batch. It does not know how to.
Raw. Alive. Never Dormant.
Most commercial kombucha sold in India — and globally — is pasteurised. Pasteurisation kills the microbial activity for shelf stability. The probiotic cultures — the primary reason most people consume kombucha — are dead.
We do not pasteurise our Kombucha. Ever.
From the moment our Kombucha leaves the fermentation vessel and is sealed into the bottle, it is alive. The SCOBY cultures continue their slow activity. This is what we mean when we say raw and alive — a living microbial community that has never been killed by heat treatment.
Why Dark Bottles Are Not a Design Choice
Live kombucha cultures — and specifically the probiotic bacteria within them — are sensitive to light exposure. UV and visible light at certain wavelengths can damage microbial cell membranes and degrade the organic acids that give raw kombucha its functional properties.
Our bottles are dark because we are protecting a living product. Every packaging decision starts from the question: what does the living culture in this bottle need?
A pasteurised kombucha in a clear plastic bottle is a shelf-stable beverage. Our Kombucha in a dark glass bottle is a living ecosystem.
What You Actually Get in Each Bottle
- Yerba Mate Extract (150mg per 300ml) — caffeine, theobromine, theophylline, and 196 active compounds
- Live Probiotic Cultures (1 Billion CFU) — alive and active at time of consumption
- Organic Acids — acetic acid, glucuronic acid, lactic acid produced by fermentation
- B Vitamins — synthesised by bacterial cultures during brewing
- Natural Carbonation — produced by yeast during secondary fermentation, not added artificially
- Natural Caffeine (30–40mg per bottle) — from Yerba Mate, not isolated or synthetic
Nothing is added after fermentation. No flavourings, no preservatives, no added carbonation, no synthetic vitamins.
