Step 3 — Acids accumulate: As fermentation continues, the organic acids build up, the pH drops, the tea becomes more tart, and the sugar content decreases. The longer it ferments, the less sweet and more sour it becomes.

The final product contains a complex mix of organic acids, live bacteria, trace amounts of alcohol, B vitamins from the yeast, and polyphenols from the original tea — all in a naturally carbonated drink.

A poorly made, heavily pasteurized, sugar-loaded product labeled as kombucha is unlikely to do very much at all.
